date-caramel chocolate almond slice

It’s the beginning of another week and that deserves some sweet treats! 

I’m sharing with you this sweet and crunchy date-caramel chocolate almond slice. It’s got gooey, date-caramel infused with almond butter, slivered almonds, puffed rice and dark chocolate all in one bite. And most of the ingredients are in the name of the slice itself . . . just add the puffed rice and vanilla essence and you’ve got yourself a 6-ingredient-sweet-treat-that-tastes-like-heaven! (I actually don’t know what heaven tastes like but you get where I’m going here, don’t you?)

And in addition they’re:

  • no bake 

  • refined sugar free

  • gluten free 

  • super delicious

Ingredients

  • 20 dates, pitted

  • ⅓ cup almond butter

  • 1 tsp vanilla extract

  • 1 cup puffed rice (or as we know it - Rice Bubbles)

  • ½ cup slivered almonds

  • 100g dark chocolate (sugar free)

Instructions

  1. If dates are dry, soak in hot water for 10 minutes. Drain, then add to a food processor with almond butter and vanilla extract. Process until a paste is formed.

  2. Add puffed rice and almonds to a mixing bowl, along with the date paste. Stir well with a wooden spoon or your hands, to combine. It should be a very sticky ball.

  3. Line a loaf tin with greaseproof paper and push in the mixture, smoothing over with the back of a spoon to make sure it is even.

  4. Melt chocolate and pour over the mixture. Set aside in the fridge to set, about 30 minutes.

  5. Cut into slices with a hot knife.

    Eat and enjoy!
