raspberry and white chocolate muffins
With Easter just around the corner, I thought it’s a good time to share another recipe. I did seriously think about Hot Cross Buns but they’re pretty much everywhere, and I couldn't be certain that my recipe (which I haven’t actually got yet 😏) would be better than those of the bakeries.
So… enter my easy peasy raspberry and white chocolate muffins. Actually, it really isn’t my recipe but that of my good friend, Alison (thanks Sage).
ingredients
2 ½ cups SR flour
1 cup caster sugar
1 tsp baking powder
1 egg
1 tsp vanilla essence (or scrape a vanilla pod for a flavour boost)
½ cup vegetable oil
½ cup milk
300g frozen raspberries (or fresh, if you hang the expense)
A handful of white chocolate bits - I use these.
instructions
Preheat oven to 170℃
Mix dry ingredients together and make a well.
Add wet ingredients.
Mix together with a wooden spoon.
Add 300g raspberries and a handful of white choc pieces.
Place into muffin cases and sprinkle a little sugar on top to make a crust.
Bake for about 30 minutes.
