radicchio salad

Boy, October just whizzed by, didn’t it? We’re well into Spring and it’s officially less than two months till Christmas and less than three months until the end of the decade. How did that happen?


The recipe I’m sharing today is for a simple but super tasty salad. It’s definitely one of my go-to recipes. It’s supposed to be a winter salad but I love it all year round, when I can get my hands on radicchio. Oh, and it’s a great Christmas salad. It’s so effortless because it has 

only

three 

ingredients

Ok, I lie, there are actually four ingredients, if you count the dressing. Only four, people!

The hero ingredient in this salad is radicchio. Radicchio is a mildly bitter tasting leafy vegetable in the chicory family. You can substitute it with endive or rocket (arugula) or watercress.

So, here are the ingredients for my salad:

  1. radicchio (shredded) 

  2. parmesan cheese (grated)

  3. fried shallots (I use this brand from Coles)

  4. balsamic vinegar (whatever flavour takes your fancy - I prefer the caramelised or fig balsamic vinegars like the ones from Pukara Estate)

That’s it! Chuck the first three ingredients into a beautiful bowl. Sprinkle the balsamic vinegar over those three ingredients. Toss or mix (what’s the difference?) or both. 

If you want to be super fancy, you can scatter some edible flowers as a garnish to make it over-the-top pretty. 

Serve and wait for those compliments.
