rocky road

Have you ever had a recipe that was one of your go-to favourites and then inexplicably, for no apparent reason (yes, I know - tautology) just went off your radar for years? For me, Rocky Road is one such recipe. I used to make these morsels of chewy delicious treats quite regularly - say, um 20 odd years ago *insert grimacing face emoji or 😬. 

After googling Rocky Road, and seeing a bunch of variations, my old faithful recipe came back to me so clearly. I tweaked it a bit and have come up with my new and improved version of RR.

Ingredients

500g dark choc or milk or both together - you choose, you know what you like

2 packets marshmallows - I used these and these   (from Coles)

2 cups - salted peanuts

2 cups shredded coconut - toast about ¾ cup and leave the rest plain

a handful of sesame seeds

Method

Melt the chocolate (I’m assuming you know how to do this on the stove top or in a microwave). Add all the other ingredients and stir well. I think one at a time is the best way to do this. 

Mix the ingredients really well and pour the whole lot into a baking dish.  Mine dish measured 28cm X 22cm. I sprinkled the top with toasted coconut. 

Pop into the fridge for about an hour and a half. 

Remove the now hardened Rocky Road from the baking dish and cut into squares or rectangles and serve. 

You’re allowed to eat more than one in one go - it’s Christmas!
